Ingredients

Scale

Meat and Seasoning

  • 1 lb ground beef
  • 1 pkg taco seasoning (or homemade equivalent)

Base

  • 1 13 oz pkg tortilla chips

Toppings

  • 1 small can sliced black olives
  • 1 cup cheddar cheese, shredded
  • 1/2 cup marble jack cheese, shredded
  • 1 tomato, diced
  • 1 jalapeño, sliced thin
  • Chopped cilantro, to taste

Dressing

  • 1/2 cup sour cream
  • 1/4 cup ranch dressing
  • 34 tablespoons milk

Instructions

  1. Preheat the oven. Set the oven to 350°F (175°C) to ensure it’s ready for baking the nachos later.
  2. Cook the ground beef. In a skillet over medium heat, brown the ground beef until it is no longer pink, breaking it up as it cooks. Once cooked, drain any excess fat.
  3. Add taco seasoning. Stir in the taco seasoning and the amount of water specified on the seasoning package. Cook until the mixture thickens and flavors meld, then remove from heat and set aside.
  4. Prepare the chip base. On a 10×15-inch sheet pan, spread out the tortilla chips in an even layer to form the base of the nachos.
  5. Assemble the nachos. Evenly distribute the seasoned beef over the chips, then sprinkle with sliced black olives and both types of shredded cheese.
  6. Bake the nachos. Place the sheet pan in the preheated oven and bake for 5-6 minutes, or just until the cheese is melted and bubbly.
  7. Make the sour cream dressing. While the nachos bake, combine the sour cream, ranch dressing, and milk in a small bowl. Mix until smooth and creamy.
  8. Add final toppings. Remove the nachos from the oven and drizzle generously with the sour cream dressing. Then sprinkle diced tomatoes, thinly sliced jalapeños, and chopped cilantro over the top.
  9. Serve immediately. Enjoy the nachos hot for the best flavor and texture.

Notes

  • You can substitute ground turkey or chicken for ground beef for a lighter option.
  • Adjust the amount of jalapeño based on your spice preference.
  • For extra gooey cheese, add more shredded cheese or use a blend of your favorites.
  • Serve with additional toppings like guacamole or salsa if desired.
  • To keep the chips crispier, add fresh toppings after baking rather than before.
