Ingredients

Scale

Gnocchi Mixture

  • 1 tbsp olive oil
  • 1 tbsp unsalted butter (room temperature)
  • 1 large sweet onion (thinly sliced)
  • 1/4 cup white wine
  • 1 tbsp fresh minced thyme (or 1 tsp dried)
  • 2 cups beef broth
  • 1 lb gnocchi (fresh or frozen)
  • Salt, to taste
  • Pepper, to taste

Topping

  • 1 cup shredded Swiss or Gruyere cheese (preferably Gruyere)
  • 810 slices French bread (day-old works best, for serving)

Instructions

  1. Caramelize the Onions: Preheat your oven to 400°F (200°C). In a large skillet or Dutch oven over medium heat, melt together 1 tbsp olive oil and 1 tbsp unsalted butter. Add the thinly sliced sweet onion and cook, stirring occasionally, until the onions become deeply caramelized and golden brown, about 20 minutes. Take your time as slower cooking brings out sweeter, richer flavors.
  2. Deglaze and Simmer the Gnocchi: Pour in 1/4 cup white wine to deglaze, scraping up browned bits from the bottom of the pan. Add 1 tbsp minced fresh thyme (or 1 tsp dried) and 2 cups beef broth, then bring to a simmer. Add 1 lb gnocchi and stir occasionally over medium heat until gnocchi is tender and the sauce thickens and reduces, about 5-10 minutes.
  3. Season and Assemble for Baking: Season the gnocchi mixture with salt and pepper to taste. Transfer everything to a greased medium baking dish and spread evenly. Sprinkle with 1 cup shredded Gruyere or Swiss cheese for a flavorful topping.
  4. Bake the Gnocchi: Place the baking dish in the preheated oven and bake at 400°F (200°C) for 20-25 minutes, until the cheese is bubbly and lightly browned on top. Remove from oven and allow to cool slightly before serving.
  5. Serve with French Bread: Serve the hot baked gnocchi alongside 8-10 slices of day-old French bread for dipping into the cheesy, savory sauce. Enjoy each delicious bite!

Notes

  • Slow caramelization of onions enhances sweetness and depth of flavor.
  • Gruyere cheese is recommended for a richer, deeper taste, but Swiss cheese can be used as a substitute.
  • Day-old French bread works best for serving as it holds up well for dipping.
  • Fresh or frozen gnocchi can be used without affecting the final result.
  • Adjust seasoning with salt and pepper according to taste.
