Instructions

  1. Prepare the Filling: Cook or use pre-cooked chicken and shred or dice it. In a large bowl, mix the chicken with black beans, corn, chopped jalapeño, diced red bell pepper, chopped spinach, black pepper, chili powder, salt, cumin, and shredded Monterey Jack cheese until well combined.
  2. Prepare the Egg Roll Wrappers: Lay each egg roll wrapper on a clean surface in a diamond shape. If wrappers are dry, cover lightly with a damp towel to prevent cracking.
  3. Assemble the Egg Rolls: Place 2-3 tablespoons of the filling in the center of each wrapper. Fold the bottom corner over the filling, fold in the side corners, roll tightly, and seal the top corner with a little water or egg wash to secure.
