  • ¼ cup mayonnaise
  • ¼ cup water
  • 4 teaspoons fresh lime juice
  • 2 teaspoons chipotle chili powder (or 1 tablespoon ancho chili powder)
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin
  • 1 tablespoon minced garlic (approximately 2 large cloves)
  • ½ teaspoon salt (plus more to taste)
  • Freshly cracked black pepper to taste
  • 2 tablespoons fresh cilantro leaves (or 1 tablespoon chopped fresh cilantro)

Instructions

  1. Combine Ingredients: Add ¾ cup full-fat sour cream, ¼ cup mayonnaise, ¼ cup water, 4 teaspoons fresh lime juice, 2 teaspoons chipotle chili powder, 1 teaspoon smoked paprika, ½ teaspoon cumin, 1 tablespoon minced garlic, ½ teaspoon salt, freshly cracked black pepper, and 2 tablespoons fresh cilantro leaves to a blender.
  2. Blend Until Smooth: Blend the mixture until completely smooth. Pause the blender occasionally to scrape down the sides with a silicone spatula to ensure all ingredients are well-incorporated, then continue blending until smooth.
  3. Store and Serve: Once the dressing is smooth, transfer it to an airtight container. Serve immediately as a dressing for salads or as a sauce, or refrigerate until ready to use. The flavors will intensify after chilling.

  • You can substitute chipotle chili powder with ancho chili powder if you prefer a milder smoky flavor.
