Instructions

  1. Heat oil and brown sausage: In a large pot over medium heat, heat the vegetable oil. Add the sliced andouille sausage and cook for 3-4 minutes until browned. Remove the sausage from the pot and set aside.
  2. Sauté vegetables: In the same pot, combine diced onion, celery, and red bell pepper. Cook for 5-8 minutes until the vegetables are softened. Add the minced garlic and cook for an additional minute until fragrant.
  3. Add spices and broth: Stir in the Cajun seasoning, kosher salt, black pepper, paprika, and cayenne pepper. Pour in the chicken broth and add the peeled, cubed russet potatoes.
  4. Simmer the soup: Reduce the heat to low and simmer the soup until the potatoes are fork-tender, about 20-25 minutes.
  5. Finish the soup: Return the browned sausage to the pot. Stir in the heavy whipping cream and cheddar cheese. Simmer for an additional 5 minutes until heated through and the cheese has melted.
