Ingredients

Scale

Noodles and Protein

  • 8 oz wide Lo Mein noodles, cooked and rinsed
  • 1 tablespoon peanut oil
  • 1 pound ground pork
  • 1/4 cup + 2 tablespoons sliced green onions, divided

Sauce

  • 1/2 cup low-sodium chicken broth
  • 3 tablespoons mirin
  • 2 tablespoons dark soy sauce
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha

Vegetables

  • 4 cups coleslaw mix

Instructions

  1. Cook Noodles: Boil the wide Lo Mein noodles according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process, then set aside.
  2. Brown Pork: Heat the peanut oil in a skillet or large pan over medium-high heat. Add the ground pork along with 1/4 cup of the sliced green onions. Cook, breaking the meat apart, until the pork is fully browned and cooked through, about 5-7 minutes.
  3. Prepare Sauce: In a bowl, whisk together the low-sodium chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha until well combined.
  4. Combine Ingredients: Add the cooked noodles and coleslaw mix to the skillet with the browned pork. Pour the sauce over the mixture and toss everything together using tongs or a spatula, cooking for 2-3 minutes until the noodles and vegetables are coated in the sauce and slightly wilted.
  5. Garnish and Serve: Remove from heat and garnish the noodle bowl with the remaining 2 tablespoons of sliced green onions. Serve warm and enjoy!

Notes

  • You can substitute ground chicken or turkey for pork if preferred.
  • If you like your noodle bowl spicier, increase the amount of sriracha to taste.
  • For a vegetarian version, replace ground pork with tofu and use vegetable broth instead of chicken broth.
  • Mirin adds a slight sweetness; if unavailable, a mixture of rice vinegar and a pinch of sugar can be used.
  • Ensure to rinse noodles after boiling to prevent clumping and avoid overcooking.
