Instructions

  1. Cook the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear to remove excess starch. In a medium pot, combine the rinsed rice and 1 ½ cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the water is absorbed and rice is tender. Remove from heat, stir in 1 tablespoon rice vinegar and ½ teaspoon salt. Cover and let it sit for 10 minutes to absorb flavors.
  2. Prepare the Shrimp: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until they are fully cooked and opaque. In a small bowl, mix 2 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 tablespoon sesame oil, 2 teaspoons sugar, and 2 tablespoons sriracha sauce to make a spicy glaze. Drizzle this over the cooked shrimp, toss to coat evenly, and cook for an additional minute to infuse flavors.

Assemble the Sushi Stacks: Using a round mold or the inside of a clean can, layer a portion of the seasoned sushi rice into individual serving glasses or bowls, pressing down gently to compact the rice. Top the rice with the spicy shrimp mixture, pressing lightly to make it stick. Add a layer of sliced avocado and julienned cucumber on top for freshness and texture. Garnish with sesame seeds and fresh cilantro or green onions for added flavor and visual appeal.
