  • 1 ¼ lb sirloin steak, cut into ½ inch cubes
  • Remaining 2 tablespoons ghee or butter from the ¼ cup total (divided)
  • Salt and pepper for seasoning the steak bites

Instructions

  1. Prep: Cut Yukon gold potatoes into ½ inch cubes and sirloin steak into ½ inch cubes. Mince garlic cloves. Measure out herbs and seasonings.
  2. Heat the Skillet: Place a large cast iron skillet over medium heat. Add 1 tablespoon olive oil and 2 tablespoons of the ghee to the pan, allowing the fats to heat up together.
  3. Cook the Potatoes: Once the ghee has melted, add the cubed potatoes to the skillet. Sprinkle the minced garlic, dried thyme, oregano, sea salt, and ground black pepper over the potatoes. Let cook for 2-3 minutes undisturbed to start browning, then stir. Continue cooking and stirring frequently every 1-2 minutes until the potatoes are golden brown and fork tender, approximately 8-10 minutes. Avoid overcrowding the pan to ensure even cooking. Once ready, remove the potatoes and browned bits from the pan and set aside.
  4. Sear the Steak: Increase the heat to medium-high and add the remaining 2 tablespoons of ghee to the pan. Once the ghee melts and is hot, add the steak cubes. Season lightly with salt and pepper. Allow the steak to cook undisturbed for at least 2 minutes to develop a good sear. Stir and continue to cook until the steak bites are golden brown on all sides, about another 1-2 minutes.
  5. Combine and Serve: Return the cooked potatoes to the skillet with the steak bites. Stir gently to combine and heat through. Taste and adjust seasoning with additional salt and pepper as desired. Remove from heat and garnish with freshly chopped parsley if using. Serve immediately and enjoy!
