Instructions

  1. Combine dry ingredients: In a large bowl, mix together the oats, chia seeds, and vegan vanilla protein powder if using. Whisk them together to evenly combine all the dry ingredients.
  2. Add liquid ingredients: Stir in the dairy-free milk, 1 tablespoon of maple syrup, and the vanilla extract into the dry ingredients. Cover the bowl and refrigerate for 2-3 hours to allow the oats and chia seeds to absorb the liquid and thicken.
  3. Prepare strawberries: Place the frozen strawberries in a microwave-safe bowl and microwave on high for 2 minutes. Cut the berries into smaller, bite-sized pieces, then continue microwaving for another 2-3 minutes in 30-second intervals, stirring and checking until the berries are bubbling and the liquid has reduced by about a quarter.
