Strawberry Filling

  • 2 puff pastry sheets, thawed
  • 1 large egg (lightly beaten with 1 teaspoon water)
  • 23 tablespoons sugar for topping (optional)
  • ¼ cup (60 ml) strawberry jam (optional for topping)

Vanilla Glaze (Optional)

  • 1 cup (120 g) powdered sugar
  • ½ teaspoon vanilla extract
  • 23 tablespoons (3045 ml) milk

Instructions

  1. Prep: Preheat the oven to 400°F (204°C). Line two large baking sheets with parchment paper. Allow the puff pastry sheets to thaw at room temperature for 30 to 45 minutes.
  2. Prepare Strawberries: In a mixing bowl, combine the sliced strawberries, sugar, and cornstarch. Toss to coat the berries evenly and set aside at room temperature for 15 minutes to macerate and thicken.
  3. Make Cream Cheese Filling: In another bowl, whip the room temperature cream cheese until smooth. Blend in the powdered sugar and vanilla extract until fully combined and creamy. Adjust sweetness to taste.
  4. Cut Puff Pastry: Unfold one puff pastry sheet to a square. Slice along the fold lines into rectangles, then cut each long rectangle in half to create six smaller rectangles total. Using a small knife, gently score a ¼-inch border inside each rectangle without cutting through.
  5. Assemble Danishes: Spread 1 tablespoon of cream cheese filling inside the scored border of each rectangle. Layer the macerated strawberries decoratively on top of the cream cheese. Lightly brush the edges of the pastry with the egg wash, and sprinkle with sugar if desired for extra sparkle.
  6. Chill: To help the puff pastry puff beautifully, place the prepared baking sheet with danishes into the refrigerator for 15 to 20 minutes if the dough has softened.
  7. Bake: Bake the strawberry cream cheese danishes in the preheated oven for 20 to 25 minutes, or until the puff pastry is a light golden brown and fully cooked.
