Pasta and Vegetables

  • 16 oz rotini pasta (or any short noodle pasta)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (11 oz) corn, drained
  • 1 cup fresh spinach, roughly chopped

Dressing

  • 1 cup full fat plain Greek yogurt
  • 2 tbsp extra virgin olive oil
  • ½ tbsp minced garlic
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • 1 tsp sugar
  • 1 tsp salt
  • Juice of 2 limes (about 2 tbsp)
  • ½ cup mayonnaise (optional – see note)

Instructions

  1. Cook the Pasta: Bring a large pot of water to a boil and cook the rotini pasta according to the package instructions until al dente. Once cooked, drain the pasta in a strainer and rinse under cool water to stop the cooking process and cool the pasta.
  2. Prepare the Dressing: In a large mixing bowl, combine the Greek yogurt, extra virgin olive oil, minced garlic, cumin, smoked paprika, sugar, salt, mayonnaise (if using), and freshly squeezed lime juice. Whisk everything together until the dressing is smooth and well blended.
  3. Mix Salad Ingredients: Add the drained and cooled pasta, black beans, corn, chopped spinach, and cilantro into the bowl with the dressing. Gently stir until all the ingredients are evenly coated with the dressing. Taste and adjust seasoning with additional salt, pepper, or lime juice if desired.
  4. Chill and Serve: You can serve the salad immediately or refrigerate it for a couple of hours to allow the flavors to meld. Serve cold or at room temperature for best taste.
