Ingredients

Scale

Main Ingredients

  • 1 lb ButcherBox ground beef
  • ½ cup onions (chopped finely)
  • 1.5 tablespoons taco seasoning
  • 1 cup nonfat Greek yogurt
  • ¾ cup low fat, small curd cottage cheese
  • ½ cup salsa
  • 1.5 cups cheddar cheese (divided)
  • ½ cup black beans (optional)

Toppings

  • ¼ cup tomato (diced)
  • ¼ cup olives (diced)
  • ¼ cup avocados (diced)
  • Other options for toppings: guacamole, lettuce, green onions, cilantro

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the dip.
  2. Cook Beef Mixture: In a pan over medium heat, brown the ground beef and finely chopped onions until fully cooked, about 10 minutes. Break the beef into small pieces while cooking. Once cooked, stir in the taco seasoning evenly to coat the mixture.
  3. Mix Dip Ingredients: In a mixing bowl, combine the cooked beef and onion mixture with nonfat Greek yogurt, low fat cottage cheese, salsa, and ¾ cup of the shredded cheddar cheese. Stir until the mixture is smooth and well blended. Add black beans if using.
  4. Assemble in Baking Dish: Pour the mixed dip into an 8×8-inch baking dish. Evenly sprinkle the remaining ¾ cup of cheddar cheese on top, adding more if desired.
  5. Bake the Dip: Place the baking dish in the preheated oven and bake for 20-25 minutes until the cheese on top is melted and bubbly.
  6. Add Fresh Toppings: After baking, garnish the dip with diced tomato, olives, avocados, and any other desired toppings such as guacamole, lettuce, green onions, or cilantro before serving.

Notes

  • For extra creaminess, feel free to add more cheddar cheese on top before baking.
  • Black beans are optional and can be omitted or substituted based on preference.
  • Use fresh, finely chopped onions for best texture in the beef mixture.
  • This dip is best served warm with tortilla chips or fresh vegetable sticks.
  • Adjust the amount of taco seasoning to taste for more or less spice.
