Mixed Nuts

  • 16 oz (about 3 cups) mixed nuts (3 oz cashews, 3 oz almonds, 3 oz pecans, 3 oz walnuts, 4 oz peanuts – omit peanuts for Paleo)

Wet Ingredients

  • 1 large egg white
  • 170g (about 1/2 cup) honey

Spices & Seasonings

  • 1 1/2 tsp Kosher salt
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1/2 tsp chili powder
  • 1/2 tsp red pepper flakes
  • 1/2 tsp cayenne pepper (use 1/4 tsp for milder mix)
  • 1/4 tsp cracked black pepper
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves

Instructions

  1. Preheat Oven: Preheat your oven to 250 degrees F (120 C). Line a large baking sheet with a silicone liner or parchment paper to prevent sticking and facilitate easy cleanup.
  2. Coat Nuts with Egg White: In a medium mixing bowl, whip the egg white until frothy. Add the mixed nuts to the egg whites and toss well to coat every nut evenly, which helps the honey and spices adhere.
  3. Add Honey and Spices: Warm the honey slightly if it is firm—about 10-15 seconds in the microwave—to liquify it. Add the honey along with all the spices and seasonings to the nuts. Mix thoroughly to evenly coat the nuts with the sweet and spicy glaze.
  4. Roast the Nuts: Spread the nut mixture evenly onto the prepared baking sheet. Place the sheet in the preheated oven and roast for 45-60 minutes. Stir and turn the nuts every 15 minutes with a wooden spoon or spatula to ensure even toasting. Roast until the nuts are lightly browned, glossy, and fragrant.
  5. Cool and Store: Remove from oven and allow the nuts to cool completely on the baking sheet for at least 10 minutes. This cooling step ensures the cashews and other nuts become perfectly crunchy. Break apart any large clusters and store the roasted nuts in an airtight container in a cool, dry place for up to two weeks.
