Instructions

  1. Prepare the Feta: Break the block of feta into about 8 pieces and place them in a fine mesh strainer. Rinse briefly under cold water and then drain well to reduce saltiness, although this step is optional.
  2. Make the Hot Honey: In a small saucepan, combine the honey and red pepper flakes. Warm over medium heat until the honey starts to simmer. Remove from heat and let it cool while you prepare the dip.
  3. Whip the Feta: Transfer the drained feta to the bowl of a food processor. Add the fresh lemon juice and whole milk or Greek yogurt. Process until the mixture reaches a ricotta or cottage cheese texture. While the processor is running, slowly drizzle in the olive oil. Scrape the bowl and process again until smooth and creamy, resembling Greek yogurt consistency. Transfer to a serving bowl.
  4. Assemble and Serve: Create a swirl pattern in the whipped feta dip with a spoon. Drizzle the cooled hot honey over the top. Garnish with chopped pistachios and serve immediately with toasted baguette slices.
